
A little zucchini adds a lot to any lunch, and that appears to be the theme today. I have four delicious containers packed full of flavor. In the main compartment, I have a lemon pasta salad with onion and zucchini. I have two middle compartments full of fruit, including strawberries and apples, and a salad made with spinach, grapes, strawberries, diced raw mushrooms and balsamic vinegar. In the bottom compartment, I have two hard-boiled eggs and a muffin that is made with chocolate chips and zucchini. My wife made the muffins and pasta salad, and I'm looking forward to chowing down a little later on today. Truth be known, I already dug into a little bit of the muffin - and I was not disappointed. Here's to flavor, and zucchini!
