A Lunch of Salads

A healthy lunch once again, through the process of salads: a vegetable salad, a pasta salad, and a fruit salad.

The "regular" salad, if you can even call it regular, is composed of spinach leaves, halved golden gem tomatoes that I got from the farmer's market, diced raw mushrooms, pepper, and extra virgin olive oil Greek vinaigrette with feta cheese and oregano. The pasta salad is a delicious collection of bowtie pasta, tomato, zucchini, olive oil, herbs, and parmesan cheese. Lastly, the fruit salad contains diced strawberries, halved grapes, blueberries and blackberries with a sprinkle of sugar.

The main course in this four container lunch consists of two mini sandwiches. One is dressed with Lemonaise, Boar's Head Pastrami and Horseradish flavored cheddar cheese. The other is made with horseradish sauce, Boar's Head rosemary and sundried tomato ham and Boar's Head Danish Havarti with dill cheese.

Can't wait til lunch!
