
My lunch is a hit! Tonight I'm back at work eating my lunch, although earlier I did break into my third container down to nibble on some peanut butter and crackers that I assembled before work for a little snack. Everyone keeps coming around to say "how neat" my lunch is and how delicious the food inside looks.
Tonight I am having pasta salad that my beautiful wife made me last night. She used the pasta she'd made before and threw in some purple pepper, onion, zucchini and a homemade dressing consisting of oil, spices and I believe the Lemmonaise spread I had bought for sandwiches. Today I added some more pepper and a little salt. It's fantasitc. I'm also having a spinach salad I made last night, but I waited to put the balsamic dressing on until I packed it all up. I also cut up a little bit of watermelon that we got at Central Market the other day for a little fruit dessert. I must have overestimated the number of containers, too, because I boiled two eggs for lunch and when I went to add them to a container, I realized I had none left - although I swear I counted at least a dozen times what I was putting in what dish and I still had room for eggs. Guess not. I put them in the fridge for tomorrow's lunch.
I just finished my pasta salad and I'm moving on down the tower. It's cool that my lunch is cool, and even better than it's actually neat to eat the creative things I made. I've decided to go all-cold. The hot stuff doesn't work because by the time I get around to eating in, it's very un-hot. All-cold works best, and there are actually a ton of possibilities.
