Spicing up my Lunch Life!

With the baby on the way, I thought it high time to start taking my lunch to work - and actually eating the lunch I pack! Too many times recently my lunch ended up sitting on my desk, or in the fridge if I was so inclined, while I found myself eating out again... Chinese, Mexican, fast food (lots and lots of fast food). You name it.

So I'm on board with this Tiffin container idea now, and the picture you see to the right is my lunch I made before work Tuesday. Four containers worth of food is actually quite a bit, and I'm getting excited about the endless possibilities that I can create in just a few round bowls. Pictured: four mini-sandwiches in the foreground image made with Muenster cheese, Lemonnaise and/or horseradish spread, and herbed turkey meat; a spinach salad with grapes and feta cheese, a fruit salad with bananas and grapes, and two hard boiled eggs.

The sandwiches were delicious, and the greatest part of everything is how excited I am over making these lunches. I hope to get more ideas and share on my blog what I'm having each day. I know - it's only a lunch. But for me, it's saving money, eating good (and healthy) food, and finding a new topic to blog about.
